Weekly Ceviche Takeover brings guest chefs to Chad White’s Zona Blanca; Adam Hegsted is up first
“Top Chef” Season 13 cheftestant Chad White of Spokane is hosting a new weekly Ceviche Takeover on Wednesdays at his downtown ceviche bar Zona Blanca, and Adam Hegsted will be the first guest chef to create his spin on the seafood dish.
White “is stoked about his star-studded culinary lineup” for the Ceviche Takeover, he said on the event’s Facebook page, and after the first eight weeks is considering a lineup with area sous chefs. The lineup is:
Wednesday: Adam Hegsted, Wandering Table
March 18: Peter Froese, Gander & Ryegrass
March 25: Joe Morris, Luna
April 1: Tony Brown, Ruins
April 8: TBA
April 15: Austin Conklin, Inland Pacific Kitchen
April 22: Philip Stanton, Park Lodge
April 29: Travis Dickinson, Cochinito Taqueria
White said Saturday morning that he is hoping to line up a female chef for April 8. During his time in San Diego from 2002-2015, White said, “Three of my biggest mentors were female chefs.”
Updated at 5:40 p.m. today: Mayra De Leon of De Leon Foods and De Leon’s Taco and Bar has signed up for the April 8 Ceviche Takeover.
Ceviche Takeover is first-come, first-serve, and there are no reservations. The Steel Barrel Taproom will have drink and shot specials.
Each featured chef will make a ceviche that shows off their culinary style and technique, and the idea of the event is to generate more collaboration among the industry not only with chefs, but also bartenders, brewers and others.
The Ceviche Takeover is from 6-9 p.m. at Zona Blanca, 154 S. Madison St., and the event is ages 21 and older, as Zona Blanca is located inside the Steel Barrel Taproom.
White was recently named a 2020 James Beard Award semifinalist for Zona Blanca, which celebrates its fourth anniversary in June.
