Fresh Sheet: Candied Pepitas recipe, Clinkerdagger’s 45th anniversary specials, and Stella’s is returning

In last Wednesday’s recipe for Marinated Melon Salad by Travis Dickinson, the ingredients and instructions for Candied Pepitas were inadvertently omitted. Here is the recipe:

3 cups pepitas

4 tablespoons water

¾ cup sugar

1 tablespoon glucose

1 ½ teaspoons salt

2 teaspoons Turbinado sugar

1 teaspoon chili powder

1 pinch Cayenne powder

1 pinch Ancho powder

Simmer water, sugar and glucose and stir in pepitas and chili powders. Remove from heat and stir in salt and Turbinado sugar. Bake on a Silpat baking sheet in a 350-degree oven until golden brown, then break apart when cool.

Clinkerdagger’s 45th anniversary

Spokane institution Clinkerdagger, 621 W. Mallon St. in the Flour Mill, is celebrating its 45th anniversary through July 21 with unlimited memories and $19.74 specials. The offers:

• July 8-14: 8-ounce prime rib entrée for $19.74

• July 15-21: roasted garlic prawns entrée for $19.74

And on July 25, commemorate the 1974 opening with a 45th anniversary cocktail party on the patio.

Stella Cafe’s new home

A Facebook post by Ruins on July 1 has fans of Stella’s Café overjoyed: “After a few years of looking for a spot to reinvent Stella’s, we’ve found a space. Stella’s sandwich shop will be open within the next month at 19 W. Main (in Saranac Commons). Our delicious sandwich menu will live again in a brightly lit space.

“Our old sandwich menu (complete with several vegan and vegetarian options) will come back. Ruins will offer a revamped lunch menu … more salads, pastas and entree items. So come see us at Ruins and Stella’s. In the meantime, follow Stella’s @_stellascafe for all the latest updates!
