Local bartenders and distillers are bringing something new to cocktails and spirits: patience. Barrel-aging cocktails and spirits brings a whole new depth of flavor to drinks. At Italia Trattoria, Bethe Bowman is serving a barrel-aged Negroni cocktail and Dry Fly Distilling recently unveiled a new gin that has been aged in their wheat whiskey barrels. Also, we catch up with Mountain Dome winemaker Erik Manz to talk about bubbly, just in time for New Year’s.
