Do you think it was wild backstage at this year’s Academy Awards right after Three 6 Mafia won the Oscar for their song “It’s Hard Out Here For a Pimp,” from Craig Brewer’s highly acclaimed movie, “Hustle & Flow”? You bet!

Q. OK, after the show, what were you guys drinking to celebrate your Oscar?

A. Madras is vodka with cranberry and orange juices, and we had a few!

Q. Who’s the real food expert in the group?

A. DJ Paul said, “I am! I love to cook and watch The Food Network all the time. I’d watch it 24 hours a day if I could.”

Q. When your fans visit Memphis, where should they eat?

A. The Rendezvous is a legendary spot. They should get the sausage and cheese platters with slabs of dry ribs.

Q. It’s 4 a.m., you are on the road and everyone is starving. Where do you stop and what do you get?

A. The Waffle House. We order hash browns, topped with chili, ham, onions, tomatoes, jalapeños – all covered with cheese. No one leaves hungry.

Fiscalini’s Gold Pepper Pots

6 whole peppers (2 green, 2 yellow, 1 red, 1 orange)

1 1/2 pounds ground sirloin

4 garlic cloves, minced

1 large portabella mushroom, chopped

1/2 teaspoons hot pepper sauce

6 green or black pitted olives, chopped

1/2 cup diced rehydrated sun-dried tomatoes

1 1/2 cups grated Fiscalini San Joaquin Gold Cheese

1 cup rotini pasta, cooked al dente

Preheat oven to 400 F. Parboil whole peppers. Cut off tops in order to stuff. Heat large skillet. Brown meat with garlic. Add mushroom and stir. Drain off half of the liquid, then mix in pepper sauce, olives, tomatoes, cheese and pasta. Stuff peppers with skillet mixture and bake in dish for 20 minutes. Remove from oven. Sprinkle additional cheese on top and return to oven until cheese just melts. Serves 4 to 6.
