A great potato salad recipe that doesn’t make too much. This way, you don’t have to worry about “leftovers.”

Patio Potato Salad

1/4 cup fat-free mayonnaise

1 tablespoon sweet pickle relish

1/2 teaspoon country-style Dijon mustard

1 full cup diced cooked potatoes

3/4 cup finely chopped celery

1/4 cup finely chopped onion

In a small bowl, combine mayonnaise, pickle relish and mustard. Add potatoes, celery and onion. Mix well to combine. Cover and refrigerate for at least 30 minutes. Gently stir again just before serving. Makes 2 (1 cup) servings.
