Banana bread recipes usually call for little or no liquid

Dear Readers: I received a request for a banana bread recipe that used little or no liquid other than mashed bananas and eggs. Most banana bread recipes I’ve seen do use very little liquid. Here are two from The Spokesman-Review’s Dorothy Dean files, one that uses only a couple of teaspoons of lemon juice and another that is sure to be a hit with big and little kids who like the peanut butter banana combination.

Banana Bread

From Dorothy Dean Homemaker Service

½ cup shortening

1 cup sugar

2 eggs

2 teaspoons lemon juice

2 cups sifted flour

2 ½ teaspoons baking powder

½ teaspoon salt

1 cup mashed bananas

½ cup chopped nuts

Cream the shortening and sugar; add the eggs and lemon juice and beat well. Sift the flour with the baking powder and salt and add to creamed mixture alternately with the mashed bananas. Add chopped nuts. Stir only enough to blend. Bake in greased loaf pan at 350 degrees for 70-75 minutes.

Yield: 1 loaf, about 12 servings

Approximate nutrition per serving: 272 calories, 12.6 grams fat (3 grams saturated, 41 percent fat calories), 4.5 grams protein, 37 grams carbohydrate, 35 milligrams cholesterol, 1.2 grams dietary fiber, 210 milligrams sodium.

Banana Tea Bread

From Dorothy Dean Homemaker Services, June 1938

2/3 cup shortening

1/3 cup peanut butter

1 cup brown sugar, firmly packed

3 ripe bananas

2 eggs, beaten

½ cup water

2 ½ cups flour

1 teaspoons baking powder

¾ teaspoon baking soda

¾ teaspoon salt

Cream shortening and peanut butter. Add sugar and cream well. Mash bananas and add to mixture. Beat thoroughly. Add the well-beaten eggs. Sift the dry ingredients together, then add to the creamed mixture alternating with the water. Beat only to combine. Pour into a well-greased loaf pan and bake at 350 degrees for 1 hour.

Note: This is better if left to stand a day or two before serving.

Yield: 1 loaf, about 12 servings

Approximate nutrition per serving: 346 calories, 16 grams fat (4.4 grams saturated, 41 percent fat calories), 5.8 grams protein, 46 grams carbohydrate, 35 milligrams cholesterol, 1.8 grams dietary fiber, 316 milligrams sodium.
