Too Many Cooks

Pack protein into school lunches with these homemade nut bars

Breakfast on the go. Lunch on the run. Snacks after class but before practice and way before dinner.

Back-to-school is busy.

Kat Smith’s nut bars are protein-packed and just right for any rush job of a meal. They’re also perfectly portable.

Tuck them into a lunch bag or box. Munch on one or two at the bus stop on the way to or from school.

Smith, a Spokane poet and copy editor at The Spokesman-Review, has created recipes for three flavors – and offers ideas about how to come up with your own combinations – in the next Food section.

This week’s Just Picked feature focuses on long and light green Anaheim peppers. Milder than most chili peppers, Anaheims are named for the city in California where they were first cultivated. Find out more, including a couple of recipes, on Wednesday.

Cheers!
