RV cooking: Celebrating a special birthday with wild king salmon

When birthdays roll around for one key player on the Going Mobile team, there's always a special request for dinner: wild salmon.

Johnny loves that flavorful fish from the Northwest waters and, fortunately, his birthday syncs up with the salmon season, so there was no question what we'd be eating on July 6 while we camped at the amazing Deception Pass State Park.

Side dish options were wide open, so I went to the farm stand and filled out the makings for this celebration feast. We had roasted potatoes and sweet onions, which I made at home base the day before, and tender green beans. So good. The meal started with shrimp cocktail enjoyed during a happy hour on the beach. There was also a Caesar and strawberry-rhubarb pie for the sweet finish eaten by the fire.

Don't think there was a better way to celebrate this milestone BD. Yup, Johnny's now 65!!
