The demand for a local food in Spokane is increasing and markets continue to thrive - a sign we are understanding the importance of farmers markets in developing healthy communities and a sustainable local food system.

It's hard work.

Daniel Klein at Grist learned about the farm-to-market process with an organic farm in Minnesota. Laura and Adam from Loon Organics let him film and work through their Friday-Saturday operation. "I had been idealizing the idea of starting a farm: seeing the beautiful produce stacked up at the market made me want to take out a loan, buy 50 acres, and start my own little operation," he writes. 'But after a day with the folks at Loon Organics, the frantic reality of running a diversified farm comes into focus."
